Blueberry + Canadian Maple Pancakes + Crunchy Caramel Buckini’s (Gluten + Dairy Free)

O.K, so I had my rant about being GF, but it’s not always that bad when you get into the swing of your thing.

This recipe is perfect for those that sometimes miss out on all the good stuff….(I feel a song dedication coming up). Simple to make + these babies will fill your tummy for hours! Here’s to a weekend treat for the weekly deprived!


Makes 6 small pancakes

Time: 10 mins

Serves 1

2 Tbns + 2 teaspoons almond meal

1/2 cup GF flour (I like Woolworths Select)

1 large egg (800gm)

Just short of 1/2 cup Macadamia milk (or almond)

2 spoonfuls organic stevia

1 tsn GF baking powder

A good splash vanilla extract

Pinch Himilayan salt

Organic blueberries

Caramel buckini’s or Honeycomb

Canadian maple syrup

Spray for pan

Method

Place all dry ingredients together
Whip egg + milk together

Mix both wet + dry

Spray pan and cook pancakes on med-high until unified bubbles + steam appears on first side. Turn pancakes over and cook until golden.

Keep warm with lid if doing in batches.

Serve with blueberries, maple syrup + some crunchy caramel buckini’s or honeycomb + add vanilla coconut yoghurt (if calories are your thing). You can’t tell they are GF either. Bonus!!
